My Chick Pea Delight ;)

I completed a 25 day eat clean challenge in September, and while doing so, I created a tasty new vegetarian meal from just a few simple ingredients. I love chick peas so much and decided to mix them with green squash, spinach and curry. The end result was spectacular, and here is the recipe.

Ingredients:

(4 servings)

– 1 cup of cut green squash
– 1 cup of canned chick peas (drained and washed)
– 2 cups of fresh spinach
– olive oil
– garlic/salt/pepper/curry

Steps:

Lightly coat a frying pan with olive oil. Heat the pan with medium heat. Add cut green squash first. Let it cook for about 5-10 minutes. Add small amounts of water when necessary to steam the squash. Add light seasoning to taste. Add drained and washed chick peas and fresh spinach. Reduce heat if necessary. Cook for another 10 minutes. Continue to stir and add more seasoning/curry to taste. Add water if necessary to keep the veggies moist. That’s it!!! Double the recipe for 8 servings. Enjoy hot or cold. 😉 😉
