Curry Coconut Tilapia!!! ❤️❤️❤️

I was craving a “Jamaican Style” Tilapia dish and decided to create this easy recipe for curry coconut tilapia. The taste was incredible, and I’m very proud to share this recipe with you. If you are craving a different kind of exotic “island taste” for dinner, this meal is for you. 🙂🙂🙂

Curry Coconut Tilapia

5 servings


5 Fresh/Frozen Tilapia fillets

1 cut/chopped bell pepper — orange/yellow

1/2 chopped onion (optional)

1 chopped garlic clove (optional)

Seasonings: salt/pepper – garlic – oregano – cayenne pepper – tumeric – curry

1 can of coconut milk

4 cups of cooked rice

Coat a frying pan with olive oil. Cook the fish on both sides on medium heat (5 minutes). Add seasonings — light on the salt. Continue to cook on both sides until the fish is done (5-10 minutes). Flip fish a few times until brown. 

Add fresh pepper/onion garlic to the same fish pan. Cook for a few minutes until veggies are cooked. Add half a can (*2 cups) of coconut milk and more curry powder. Stir and cook for a few minutes. Turn down heat to low. Let the fish cook and simmer on low heat for another 5-10 minutes. *Add more coconut milk for more “sauce”.

While the fish is simmering — add olive oil to another frying pan. Add cooked rice and cook on medium heat. Add same seasonings and stir — heavier on the salt. Add some coconut milk (*about 1 cup) and extra tumeric/curry for a yellow color. Continue to stir and cook until the rice is done. *Add more coconut milk for creamy rice. Less coconut milk for more firm rice. (You can also add chopped onions and pepper to your rice if you wish.)

That’s it!!!! Serve fish and sauce over rice. Enjoy!!!! 🙂🙂🙂🙂🙂🙂🙂
