Oven-less Enchiladas!!! ❤️❤️❤️

Most single apartment dwellings in South Korea do not come equipped with an oven. Those who want oven cooked meals have to purchase and install an oven on their own or they must invest in a toaster oven. I actually prefer stove top cooked meals, however, there are times when an oven would certainly come in handy. For example, when I wanna’ make Enchiladas. However, since I don’t have an oven — or a microwave — (or Enchilada sauce) in my current apartment, I recently decided to just make Enchiladas on the stove with salsa. Here is my easy recipe for stovetop Enchiladas. You can use chicken, beef or black beans as a filler. 🙂🙂
Ingredients:
6 servings
1 pack of ground beef or turkey meat

1 pack of mild taco seasoning 

1 jar of mild salsa

1 large bag of shredded cheddar cheese

6 corn tortillas or flour tortillas 

Seasonings: light salt/pepper/garlic/cayenne pepper

1 can of Enchilada sauce (optional)

2 chicken breasts (optional filler)

1 can of black beans (optional filler)
Process:

Coat a frying pan with olive oil and add ground beef (or optional filler). Cook on medium high for a few minutes. Add 1/2 cup of salsa, 1/2 package of taco seasoning and light seasonings. Continue to cook on medium heat and stir for about 10 minutes until the meat (or optional filler) is cooked completely. Add small amounts of water if needed to keep the filler moist. (Shred chicken breast after it’s cooked completely.)


In a separate pan, add a small coat of olive oil. Wet and heat 6 corn or flour tortillas in the pan. Cook each one individually for just a few minutes on each side until warm and set aside. 

Place beef filler (or other filler) inside of the cooked tortillas, add cheese and roll. 

Add a light layer of olive oil and salsa or enchilada sauce to an empty pan. Place the rolled tortillas into the pan over the sauce. Top the tortillas with another layer of salsa or enchilada sauce. Add the rest of the cheese on top. 


Cook on low heat and cover the pan. Let the enchiladas cook in the pan for a few minutes until the cheese has melted. That’s it!!!!! No oven needed. Serve with corn and Spanish rice. Enjoy!!! 🙂🙂🙂

Quick Spanish Rice: Coat a frying pan with olive oil. Add 2-4 cups of cooked white rice, seasonings and salsa. Cook until done.
